PUTIEN DUOTOU Clam Festival
Putian, located in the Fujian province of China, is the only place where you can find the Duotou Clam. It was also named as the King of Clams and has gained immense popularity among diners near and far. Those clams that you have tried in the PUTIEN (莆田) Restaurant were all freshly air-flown from Duotou Village in Putian, Fujian. If you have not tried the Duotou clams yet, PUTIEN (莆田) Restaurant is now serving them till 31st July 2019.
The Ceremony
Every year, during June, is the harvesting period. A clam digging ceremony will be held at the Cheow Hee Temple in the Duo Tou Village of Putian City.
This ceremony is a tribute to the Sea Goddess. The locals worship her to pray for a great harvest, health, and peace. As this is an annual festival, villagers are all excited to participate to show support for this ceremony.
The Harvest
The breeding process is a tedious task that is done manually by farmers in Duo Tou Village. Clam breeding involves 3 main steps; Rinsing, Scattering and Harvesting.
Rinsing - Spring is the best season to collect clam seedlings. Sized like rice grain, clam seedlings attach on crustaceans and undergo a breeding period of 2-3 months before they are collected for rinsing.
Scattering - The clam farmers scatter over 200kg of clam seedlings evenly across the breeding ground to give them ample space to grow. Clam seedlings feed on natural seaweed and microorganisms that are brought in from the tides. This procedure usually starts on the 2nd or 3rd week of the Lunar New Year.
Harvesting - After half a year of cultivation, fresh golden-shelled finally emerged and ready to harvest.
